Indians know their way around an aloo or potato. I’d venture to claim that we have the most variety of aloo recipes, more than any other culinary heritage, though I have no official backing of said claim. We use it as stuffing for flatbread, to encase meats, or as a stand-alone dish. We deep fry ’em, boil them, toss them in the tandoor, or cook it in spiced jhol. The recipes are endless.
